Ingredients

500ml cream
500ml buttermilk
1/2 vanilla beans
1/2 zest of 1 lemon
4 leaves gelatin
75g sugar

Method

1. In a saucepan, boil cream, milk, sugar, vanilla & lemon

2. In a separate bowl, soak gelatin in cold water until soft

3. Stir into hot mixture

4. Strain, over cool ice

5. Pour into moulds & refrigerate

6. Serve with fresh summer berries
